Eating animals

I have been reading the Jonathan Safran Foer book “Eating Animals” in small doses. Its depressing. At the same time, I want to know. Its hard not to have a conscience when being educated and knowing. Friend Diana recommended “The Omnivore’s Dilema” which I have also started, but will put on hold till I finish the Foer book, but it does look to be a good one. At the same time that I picked up those two books I picked up “The Conscious Cook” by Tal Ronnan since I figured I need to learn how to cook differently and I saw Ronnan on an Oprah segment, he is quite brilliant. So, when I say I need to learn how to cook all over again I mean most of our meals have been animal based. With one chicken I will make several meals by boiling part of it for boullion which I will use for soup or pasta, I’ll dice some of the meat up for burritos or chicken salad, we will grill the breasts for a low cal meal, I will chop up leftover chicken for fajitas or in frittatas for breakfast. Inexpensive protein goes a long way and that is how I have operated ever since I started cooking for someone. I’m not complaining because the more into it I get the more I realize how hard it isn’t, to make a different choice. I have also discovered that the Gelson’s just a short distance away sells free range chicken and turkey. I feel better about eating animals that at least didn’t suffer their whole life to feed me, but I will keep it to a minimum, I only buy turkey once a year anyway.
